Garlic and Tomato Stuffed Pork
Garlic and Tomato Stuffed Pork
2 to 2-1/2 lb. pork tenderloin
Salt and pepper to taste
1/2 cup small California Sun•Dry Sun-Dried Tomato pieces
2 tbsp. Christopher Ranch Roasted Garlic slivered
1/4 cup balsamic vinegar
2 tbsp. oil from tomato jar
Rinse pork and pat dry; season with salt and
pepper. Make slits over the top and
sides. Press tomato pieces and garlic in slits. Grill
over high heat for about 10
minutes to sear all sides; reduce heat to low.
Place on heavy duty foil and pour
balsamic vinegar and oil over the top. Seal foil
and grill for 20 minutes more or
until pork is cooked through.

Serves 6.
