Fried Green Tomatoes
Fried Green Tomatoes
4 firm green tomatoes cut in to 1/4 -inch slices
Seasoned salt and black pepper to taste coarsely ground
Extra light olive oil for frying
Flour for dredging
Season tomato slices heavily with seasoned salt and pepper. Heat several inches of oil in a large skillet over medium-high heat. Add flour to a resealable bag; add several tomato slices and shake well to coat. Place slices in hot oil and cook for 3 to 4 minutes per side or until golden brown. Remove from skillet and drain on paper towels. Serve while still hot.

Makes 6 to 8 servings.
