Peachy Rosé Sorbet

Peachy Rosé Sorbet
1-1/2 cups sugar
1 cup Folie à Deux Ménage à Trois Rosé wine
2 cups peeled and pureed peaches
3 to 5 tbsp. lemon juice
Fresh peach slices and small edible flowers, optional for garnish
Prep time: 15 minutes
Cook time: 5 minutes
Chill time: at least 2 hours

Stir together sugar and wine in a medium saucepan; bring to a boil. Reduce heat and simmer for 2 to 3 minutes or until sugar has dissolved. Refrigerate until well chilled, then stir in peach puree and 3 tbsp. lemon juice. Check flavor, adding more lemon juice to taste. Transfer to the bowl of an ice cream maker and freeze according to manufacturer's instructions. Press plastic wrap onto the surface and freeze for at least 2 hours, or up to 3 days. Spoon into small dishes and garnish with fresh fruit slices and small edible flowers, if you like.

Makes 8 to 10 servings.

Tip! To peel a peach, plunge it in boiling water for 30 seconds to a minute, then drop into chilled water. The skin should slip away easily.
