California Chopped Salad
3/4 lb. smoked turkey cut into 1/2-inch cubes
4 cups romaine hearts coarsely chopped
1 cup Raley's Fresh Produce Pico de Gallo
3/4 cup pepper Jack cheese small cubes
1/2 cup canned Mexicorn or corn drained
1/3 cup red onion finely chopped
1 (2.25- oz.) can sliced ripe olives drained and coarsely chopped
Avocado Dressing (recipe follows)
Crumbled tortilla chips (garnish)
Prep time: 15 minutes

Place all salad ingredients in a large bowl. Drizzle with dressing and toss well to coat. Garnish with tortilla chips.

Avocado Dressing: Whisk together 2/3 cup AvoClassic Guacamole, 3 tbsp. fresh lime juice and 1 tsp. McCormick Mexican Seasoning in a small bowl.

Makes 4 to 6 servings.

This salad is easy to make and tastes great. My husband doesn't like avacados so I subsitute ranch dressing for the guacamole.
