Trailside Trout with Bacon and Apples

Trailside Trout with Bacon and Apples
4 strips bacon
1 green apple seeded and coarsely chopped
1 small onion peeled and coarsely chopped
2 stalks celery sliced
4 large Sierra Bow or rainbow trout cleaned
1 tsp. lemon pepper or to taste
Flour for dredging
1 tbsp. oil
Prep time: 10 minutes, Cook time: 30 minutes

Cook bacon in a large skillet for about 10 minutes or until
crisp; remove and drain on paper towels. Add apple and onion
to skillet and cook for 5 minutes, stirring frequently. Add
celery and cook for 5 minutes more. Transfer to a bowl and
keep warm. Sprinkle trout with salt and lemon pepper, then
coat with flour, shaking off excess. Heat oil in same
skillet. Add trout and cook for about 5 minutes on each side
or until golden brown and fish flakes easily with a fork.
Add apple mixture back to skillet and cook for a minute more
to heat through.

Makes 4 servings.
