Tomatoes and Basil with Fresh Mozzarella

Tomatoes and Basil with Fresh Mozzarella
1/2 lb. fresh Mozzarella Fresca mozzarella cheese cut into 1/4-inch thick slices
4 large, ripe tomatoes cored and cut in to 1/4 -inch thick slices
10 whole basil leaves
2 tbsp. extra virgin olive oil
1 tbsp. aged balsamic vinegar
Splash of lemon juice
Salt and pepper to taste
1 tbsp. sliced fresh basil
Arrange mozzarella, tomatoes and basil on a serving plate. Whisk together oil, vinegar and lemon juice and drizzle over cheese and tomatoes. Season to taste with salt and pepper; garnish with sliced fresh basil.

Makes 6 to 8 servings.
