White Bean, Tomato and Arugula Salad

White Bean, Tomato and Arugula Salad
2 (15- oz.) cans cannellini beans rinsed and drained
1 cup grape tomatoes halved
1/4 cup minced fennel (white bottom part only)
1/2 cup Good Seasons Sun Dried Tomato with Roasted Red Pepper Dressing
2 cups arugula coarsely chopped
2 tbsp. fresh basil snipped
Prep time: 15 minutes, Chill time: 15 minutes

Stir together beans, tomatoes and fennel in a medium bowl. Add dressing and toss well to coat. Refrigerate for 15 minutes, then stir in arugula and basil.

Makes 8 side servings.

Tip! Salad may be made several hours ahead. Stir in arugula and basil just before serving.
