Baja Corn Salad
Baja Corn Salad
2 (15.25- oz.) cans corn, drained
1 cup Raley's Fresh Produce Pico de Gallo
1/2 cup real bacon pieces or cooked, crumbled bacon
1/2 cup light or regular olive oil vinaigrette
2 tbsp. chopped fresh cilantro chopped
1 tsp. McCormick Mexican Seasoning
1 to 2 avocados, peeled, pitted and cubed

Prep: 10 minutes, Chill: 20 minutes, Serves: 8 (side servings)

Stir together all ingredients except avocados in a medium bowl. Cover and refrigerate for 20 minutes. Add avocados and stir lightly.

Nice summer salad and its very flavorful. I would say if you can find a cheaper seasoning do it, you don't use much.
