Grilled Tomatillo Salsa
3/4 lb. tomatillos
1/4 cup white onion chopped
2 tbsp. cilantro chopped
1/2 tbsp. fresh lime juice
1/4 tsp. sugar
1 jalapeño pepper stemmed, seeded and chopped
Salt to taste
Prep time: 15 minutes
Cook time: 5 minutes

Remove papery husks from tomatillos and rinse well. Grill for about 10 minutes, turning frequently, to lightly char the skin; remove and let cool. Finely chop tomatillos and place in a small bowl; stir in remaining ingredients. Serve with Chipotle Turkey Breast (see separate recipe), chips and salsa, or spoon over any cooked Mexican dish.

Makes 1-1/2 cups.
