Madras Yam Soup

Madras Yam Soup
1 (32-oz.) container vegetable broth
1 (12.5-oz.) jar Maya Kaimal Madras Curry Simmer Sauce (reserve 3 tbsp. for Curried Garbanzo Salad)*
3 cups yams peeled, cut into 1/2-inch cubes
1-1/2 cups sliced carrots
1-1/2 cups sliced celery
1-1/2 cups chopped onion
Garlic salt to taste
Chopped fresh parsley (optional)

Prep: 15 minutes, Cook: 20 minutes, Serves: 4 to 6

1. Place broth and simmer sauce in a medium saucepan set over high heat. While heating, chop vegetables and add to pot. Bring to a boil then reduce heat and simmer, covered, for 15 minutes.

2. Garnish with parsley, if you like.

*If not making Curried Garbanzo Salad, add the entire jar of curry sauce to soup.

Very tasty! Even enjoyed the Curried Garbanzo Salad--not too much curry in one meal.
