Curried Garbanzo Salad
Curried Garbanzo Salad
Ingredients
3 tbsp. Maya Kaimal Madras Curry Indian Simmer Sauce
2 tbsp. rice vinegar
2 tbsp. extra virgin olive oil, divided
1/2 tsp. garlic salt
1/2 tsp. sugar
1 (15-oz.) can garbanzo beans, rinsed, drained and patted dry
1 tsp. curry powder
3 cups cubed ripe tomato
1/3 cup minced red onion
2 tbsp. chopped fresh parsley
Directions

Prep: 15 minutes, Cook: 15 minutes, Serves: 4

1. Whisk together simmer sauce, rice vinegar, 1 tbsp. olive oil, garlic salt and sugar in a small bowl; set aside.

2. Saute beans in 2 tsp. olive oil in a medium skillet over medium-high heat for 10 minutes or until slightly browned, stirring frequently. Stir in remaining olive oil and curry and cook for 1 minute more.

3. Add tomato and onion; cook until warm. Stir in dressing and parsley. Serve warm or at room temperature.
