Love Beets with Honey Vinaigrette

Small Plates: Love Beets with Honey Vinaigrette
Ingredients
1 tbsp. extra virgin olive oil
1 tbsp. lemon juice
1/4 tsp. honey
1/4 tsp. stone ground mustard
1/4 tsp. garlic salt
Freshly ground pepper
8 thin slices Organic Love Beets (from 1 package), cut into heart shapes using a small cookie cutter
1 cup baby arugula
1 tbsp. chopped walnuts, toasted
Directions

Prep: 15 minutes, Serves: 2

Whisk together 1 tbsp. each: extra virgin olive oil and lemon juice, 1/4 tsp. each: honey, stone ground mustard and garlic salt. Season with freshly ground pepper. Cut 8 thin slices Organic Love Beets and cut into heart shapes using a small cookie cutter. Place 1 cup baby arugula onto 2 plates and top each with 4 beet hearts. Drizzle with dressing and sprinkle with 1 tbsp. chopped toasted walnuts.
