Champagne Chicken
Small Plates: Champagne Chicken
Ingredients
1 tbsp. buttery spread
1 Raley’s fresh boneless, skinless chicken breast, cut into 6 pieces
2 tbsp. flour
1/4 cup microwaveable petite carrots
1/4 cup coarsely chopped Mycopia Specialty Trio Mushrooms
3/4 cup champagne or sparkling wine
1/4 cup 1-inch pieces asparagus
1 packet Swanson Chicken Flavor Boost (from a 1.96-oz. box)
1 pinch herbes de Provence
Directions

Prep: 15 minutes, Cook: 10 minutes, Serves: 2

Melt 1 tbsp. buttery spread in a large skillet over medium-high heat. Flatten 1 Raley’s fresh boneless, skinless chicken breast and cut into 6 pieces; coat with 2 tbsp. flour. Add to skillet and cook for 5 minutes. Turn and add 1/4 cup each: microwaveable petite carrots and coarsely chopped Mycopia Specialty Trio Mushrooms. Cook and stir for 5 minutes more. Add 3/4 cup champagne or sparkling wine, 1/4 cup 1-inch pieces asparagus and 1 Swanson Chicken Flavor Boost packet (from a 1.96-oz. box). Cook until mixture is saucy. Add a pinch of herbes de Provence and sprinkle with chopped fresh parsley, if you like.
