Cool Mango Cucumber Soup

Cool Mango Cucumber Soup
Ingredients
3 ripe mangoes, peeled and pitted
2 tsp. minced fresh ginger
2-1/4 cups chilled mango nectar
1-1/2 tbsp. fresh lime juice
4 tbsp. plain yogurt
4 tbsp. peeled, seeded and finely cubed cucumber
Finely grated lime zest
Directions

Start with chilled ingredients to get this soup on the table in under 30 minutes.

Prep: 15 minutes, Serves: 4

1. Puree mangoes and ginger in a blender or food processor. Stir in nectar and lime juice.

2. Spoon into 4 bowls and add a dollop of yogurt into each. Sprinkle with cucumber and grated lime zest over top.
