Brazilian Meat Skewers
Brazilian Meat Skewers
1-1/2 lbs. Raley's Black Angus Beef sirloin or tenderloin (filet mignon), cut into 1-inch cubes
1-1/2 lbs. Raley's fresh boneless, skinless chicken breasts, cut into 1-inch cubes
1/2 cup lemon juice
1/2 cup minced onion
1/4 cup olive oil
2 tbsp. minced garlic
1 tbsp. salt
2 tsp. sugar
8 strips thick cut bacon
Chopped fresh parsley (optional garnish)

Prep: 20 minutes, Marinate: overnight
Cook: 10 to 15 minutes, Serves: 8

1. Place beef and chicken into 2 large resealable plastic bags. Stir together lemon juice, onion, olive oil, garlic, salt and sugar in a large measuring cup; pour half the mixture into each bag. Seal bags and refrigerate overnight or for up to 2 days for best flavor.

2. Place bacon on a large plate between several layers of paper towels. Microwave on HIGH for 4 minutes. When cool enough to handle, cut bacon into 1-inch pieces.

3. Thread beef and chicken onto skewers, alternating with bacon pieces. Grill over medium heat for about 10 minutes, turning occasionally, making sure chicken is cooked through. Sprinkle with chopped parsley, if you like.
