Creamy Açaí Ice Cream

Creamy Açaí Ice Cream
3 cups Zola Acai Juice with Pomegranate or Blueberry (in our Produce Dept.)
1 cup sugar
2 cups half & half
1/2 cup heavy cream
1 tsp. vanilla extract

Prep: 5 minutes, Cook: 45 minutes, Chill: at least 1 hour
Freeze: several hours, Serves: 8

1. Bring juice to a simmer in a large saucepan. Reduce heat and simmer over low heat for 45 minutes or until reduced to 3/4 cup, stirring or tipping pan occasionally. (Reduce heat even lower as mixture gets close to 3/4 cup to avoid scorching.) Add sugar, stirring until dissolved; let cool. Stir in half & half, cream and vanilla; cover and refrigerate until very cold.

2. Transfer to the bowl of an ice cream maker and freeze according to manufacturer’s instructions. Remove paddle and freeze until ready to serve.
