Italian Meat, Veggie and Cheese Salad
Ingredients
4 cups Earthbound Farm Deep Green Blends Kale (or other kale blend), coarsely chopped
1/2 cup sliced red bell pepper
1/2 cup thinly sliced and quartered red onion
1/2 cup quartered Mezzetta Bistro Blend Olives
1/2 cup matchstick pieces smoked mozzarella cheese (in our Deli)
1/2 cup 1/4-inch strips Volpi Sopressa Veneta Salame (in our Deli)
1/4 cup Caesar dressing
2 tbsp. Raley’s Pesto
Snipped fresh basil (optional)
Hazelnuts (optional), chopped and toasted
Directions

Inspired by a Cobb salad, this version contains all the best Italian ingredients.

Prep: 15 minutes, Serves: 2

1. Place greens, peppers, onion, olives, cheese and salame in a bowl; toss lightly and place in 2 salad bowls.

2. Stir together dressing and pesto and drizzle over salads. Top with basil and hazelnuts, if you like.
