Sweet and Sour Red Cabbage
Sweet and Sour Red Cabbage
Ingredients
3 strips bacon, coarsely chopped
3/4 cup green apple peeled, chopped
1/2 cup chopped onion
6 cups shredded or thinly sliced red cabbage
2 tbsp. brown sugar
2 tbsp. red wine vinegar
1/4 tsp. sea salt
Freshly ground pepper to taste
Directions

Prep: 15 minutes  Cook: 30 minutes  Serves: 4

1. Cook bacon in a large saucepan over medium heat until crisp; remove with a slotted spoon and drain on paper towels.
2. Add apple and onion to pan and cook for 5 minutes to soften. Add cabbage and cook, covered, for 10 minutes.
3. Stir in brown sugar, vinegar and salt; cover and cook for 10 minutes more. Stir in bacon and season with pepper.
