Maple Apple Buckwheat Waffles
Maple Apple Buckwheat Waffles
1 cup buckwheat flour
1/4 cup brown rice flour
1 tsp. baking powder
1/2 tsp. cinnamon
1/4 tsp. sea salt
1 cup + 2 tbsp. Blue Diamond Vanilla Almond Breeze
3 tbsp. pure maple syrup
2 tbsp. butter, melted
1 tsp. vanilla extract
1 egg
1/2 cup peeled, cored and chopped green apple (1 large apple)

Prep: 15 minutes  Cook: 5 minutes  Serves: 4 to 6

1. Stir together all dry ingredients in a large bowl. Stir in Almond Breeze, maple syrup, butter, vanilla and egg, stirring just until dry ingredients are moistened. Stir in apple.
2. Cook in a hot waffle iron coated with nonstick cooking spray for about 5 minutes. Remove and keep warm in a 200°F oven.
3. Serve with Apple Butter, Apple Pecan Spread or plain butter.
