Deconstructed Apple Pecan Pie
Deconstructed Apple Pecan Pie
Ingredients
3 tbsp. butter
3 lbs. tart green apples, peeled, cored and sliced
3/4 cup brown sugar
1-1/4 tsp. cinnamon
1/4 tsp. ground nutmeg
1/4 tsp. ground ginger
1/4 tsp. ground cloves
1 (12-oz.) bottle hard cider
4 small scoops vanilla ice cream (optional)
Crust:
1 refrigerated pie crust dough (from a 14.1-oz. box)
1/3 cup coarsely chopped pecans
1-1/2 tbsp. brown sugar
1/2 tsp. cinnamon
Directions

Prep: 20 minutes  Cook: 30 minutes  Serves: 4 

1. Melt butter in a large skillet over medium-high heat. Add apples and cook for 5 minutes to lightly brown, stirring frequently.
2. Stir in brown sugar, spices and hard cider and bring to a boil. Cook over medium heat for 15 minutes or until apples are nicely glazed, stirring frequently.
3. To prepare crust, preheat oven to 425°F. Unroll pie crust on a lightly floured board. Sprinkle with pecans, brown sugar and cinnamon. Fold in half, then in half again and gather into a ball. Roll out 1/8-inch thick on a lightly floured board. Tear into pieces about 2½-inches wide and place on parchment-lined baking sheets. Bake for 10 minutes or until golden brown.
4. Spoon warm apples into 4 dessert cups and break pieces of crust over the top. Serve with ice cream, if you like.
