Mini Manchego Cheesecakes
Mini Manchego Cheesecakes
Ingredients
1 (4- oz.) package Keebler Ready Crust Mini Graham Cracker Pie Crusts
6 oz. cream cheese, softened
1/3 cup shredded Manchego cheese (in our Deli)
3 tbsp. honey
1/2 tsp. vanilla extract
1 egg
1 tbsp. caramel sauce (optional)
2 tbsp. chopped Blue Diamond Honey Roasted Almonds
Directions

Prep: 15 minutes, Cook: 11 to 13 minutes, Chill: 2 hours, Serves: 6  

1. Preheat oven to 375°F and place crusts on a small baking sheet. Beat cream cheese, Manchego cheese, honey, vanilla and egg with an electric mixer until well blended and smooth.

2. Spoon into crusts and bake for 11 to 13 minutes or until centers are almost set. (Cheesecakes should just jiggle slightly in the center when gently tapped.)

3. Let cool, then drizzle with caramel sauce and sprinkle with almonds. Cover and refrigerate for at least 2 hours.
