Cheesy Mexican Waffles
Cheesy Mexican Waffles
1 cup Kodiak Cakes Frontier Flapjack and Waffle Mix
1 cup milk
1 cup shredded Mexican blend cheese
1/3 cup Raley's Pico de Gallo (in our Produce Dept.)
1/4 cup fresh corn kernels
1/4 cup shredded zucchini
1/4 cup chopped walnuts, toasted
1 tsp. Morton & Bassett Mexican Spice Blend
Guacamole (optional topper)
Sour cream (optional topper)
Pico de gallo (optional topper)
Cilantro leaves (optional topper)

Serve as is or with a fried egg on top. For extra cheesy flavor, sprinkle batter with an extra 2 tablespoons of cheese before closing waffle iron.

Prep: 15 minutes, Cook: 5 minutes, Serves: 4 to 6  

1. Stir together flapjack mix and milk in a large bowl. Stir in remaining ingredients except optional toppers, adding a little more milk if mixture thickens too much while standing.

2. Cook in a hot waffle iron until golden brown. Serve with optional toppers, as desired.
