Thai Pesto Noodle Salad
Thai Pesto Noodle Salad
1/2 box Einkorn Spaghetti
1 cup lightly packed fresh cilantro leaves
1 cup lightly packed fresh basil leaves
1/3 cup salted peanuts
1/4 tsp. red pepper flakes
4 cloves garlic
1/2 cup olive oil
1/2 tsp. salt
Chopped peanuts
Snipped fresh cilantro
Snipped fresh basil

Prep: 15 minutes, Cook: 15 minutes, Serves: 4

1. Cook noodles according to package directions until al dente; drain well and rinse under cold water, then place in a bowl of ice water.

2. Place herbs, peanuts, red pepper and garlic in a food processor and process until smooth. With machine running, add olive oil, then season with salt.

3. Drain noodles well, then toss with pesto. Top with peanuts and snipped herbs.
