Mexican Grape and Rice Salad
Mexican Grape and Rice Salad
Ingredients
1 (20- oz.) package Raley's Frozen Brown Rice and White Rice Blend
3 tbsp. honey
3 tbsp. lime juice
3 tbsp. extra virgin olive oil
1 cup halved red grapes
1 cup Raley's Pico de Gallo (in our Produce Dept.)
1/2 tsp. sea salt
1/4 cup coarsely chopped fresh cilantro
Directions

Prep: 15 minutes, Cook: 3 minutes, Chill: 1 hour, Serves: 6

1. Place rice microwave-safe bowl. Cover and microwave on HIGH for 3 minutes or until heated. Stir and let cool.

2. Whisk together honey, lime juice and olive oil. Stir into rice with grapes, pico de gallo and  salt. Cover and chill for at least 1 hour.

3. Stir in cilantro just before serving.
