Turkey Sandwiches with Curried Cashew Spread
Turkey Sandwiches with Curried Cashew Spread
1/2 cup roasted, salted cashews
1/2 cup garbanzo beans, rinsed and drained
2 tbsp. lemon juice
1 tbsp. olive oil
1 tbsp. water
1-1/2 tsp. curry powder
2 cloves garlic
8 pieces naan bread
8 oz. sliced smoked turkey
Thinly sliced lettuce or arugula
Thinly sliced red onion
Thinly sliced tomatoes

Add a sprinkle of chopped cashews for extra crunch.

Prep: 15 minutes, Serves: 4

1. Puree cashews, garbanzo beans, lemon juice, olive oil, water, curry powder and garlic in a small blender or food processor.

2. Spread on 4 pieces bread and top with turkey, lettuce, red onion and tomatoes. Top with 4 more pieces of bread.
