Jalapeño Popper Potatoes
Jalapeño Popper Potatoes
1 (12-oz.) russet potato
1/4 cup cream cheese
1/4 cup shredded sharp Cheddar cheese
1/4 cup sliced green onion tops
3 tbsp. chopped pickled jalapeño peppers
1/4 cup crushed Primizie Chile and Lime Crispbreads
2 tbsp. chopped Blue Diamond Bold Jalapeño Smokehouse Almonds

Prep: 10 minutes, Cook: about 10 minutes, Serves: 2

1. Pierce potato and place on a plate. Microwave on HIGH for 6 to 8 minutes or until soft when gently squeezed. When cool enough to handle, cut in half and carefully scoop potato out of skin into a medium bowl. Mash with cream cheese, cheddar cheese, green onions and peppers.

2. Microwave for 1 minute more to heat through and spoon back into potato skins. Sprinkle with crushed crispbreads and almonds.
