1 3/4 cups Swanson Natural Goodness Chicken Broth
1 cup Uncle Ben's Fast and Natural Whole Grain Instant Brown Rice
1/2 tbsp. butter
1/4 tsp. salt
1 cup tomatillos peeled, washed and chopped
2 tbsp. canned diced green chiles
2 green onions sliced
1 clove garlic
1/4 cup lightly packed cilantro leaves
Prep time: 10 minutes, Cook time: 10 minutes

Combine broth, rice, butter and salt in a medium saucepan. Bring to a boil; reduce heat and simmer, covered, for 10 minutes. While rice cooks, combine tomatillos, chiles, onions and garlic in a blender or food processor. Pulse on and off until all ingredients are finely chopped. Add cilantro and pulse until cilantro is finely chopped. Stir mixture into hot rice.

Makes 4 servings.

I have used the tomatillo blended mix for chicken and beef but I never thought to use it in rice. I recommend frying the rice in olive oil till golden brown then adding the broth and blended ingredients. Cover and cook as stated. Great with gorditas or carnitas :)
