Crunchy Catfish with Cornbread Stuffing
Crunchy Catfish with Cornbread Stuffing
Ingredients
1/2 of a 6- oz. package Stove Top Cornbread Stuffing Mix divided
2 tsp. Cajun seasoning or Cajun's Choice Blackend Seasoning divided
1 large or 2 small catfish fillets (about 3.4 to 1 lb.)
1 1/2 tbsp. melted butter, divided
1/2 cup hot water
fresh thyme Chopped
Directions
Prep time: 10 minutes, Cook time: 15 to 20 minutes

Preheat oven to 400°F. Stir together 1/2 cup stuffing mix and 1_ tsp. Cajun seasoning in a small bowl, crushing any larger pieces with your fingers. Rinse fish and pat dry; brush with 1/2 tbsp. butter and roll in stuffing crumbs. Place in a shallow dish and sprinkle with any remaining crumbs. Bake for 15 to 20 minutes or until fish flakes easily with a fork. Meanwhile, stir together remaining stuffing mix, seasoning, butter and water in a small bowl; cover and microwave on HIGH for 1 minute. Serve fish and stuffing with a sprinkle of thyme.

Makes 2 servings.
