Antipasto Potato Salad
Antipasto Potato Salad
Ingredients
2 lb. Yukon Gold potatoes cut in to 1-inch cubes
2/3 cup salame sliced into strips (about 1/4-inch)
1/3 cup Raley's Olives Sliced
1/3 cup green onions sliced
1/4 cup olive oil vinaigrette
1 (6.5- oz.) jar Cara Mia Marinated Artichoke
Hearts chopped (do not drain)
Directions
Prep time: 20 minutes, Cook time: 10 minutes, Chill time: at least 1 hour

Steam potatoes for about 10 minutes or until tender when pierced. Transfer to a large bowl and let cool slightly. Stir in remaining ingredients and mix well. Cover and chill for at least 1 hour.

Makes 6 to 8 servings.
