Chipotle Mac 'N Cheese
Chipotle Mac 'N Cheese
6 oz. penne pasta
1 (10- oz.) container refrigerated light Alfredo sauce
3/4 cup Swanson Natural Goodness Chicken Broth or vegetable broth
1 chipotle pepper minced
plus 1 to 2 tsp. adobo sauce from can
1 (8- oz.) package Raley's Shredded Mexican Blend Cheese
1 cup Raley's Shredded Sharp Cheddar Cheese
Prep time: 10 minutes, Cook time: 20 minutes

Cook pasta in boiling salted water according to package directions. While pasta cooks, stir together Alfredo sauce, broth, chipotle pepper and adobo sauce in a medium saucepan. Bring to a boil; reduce heat to low and slowly whisk in cheeses, stirring constantly. Drain pasta and add to cheese sauce, stirring well. (Mixture will thicken as it cools)

Makes 4 to 6 servings.
