Sticky Rice
1 cup sushi rice
1 cup water
1/4 cup sugar
2 tbsp. salt
1/4 cup white vinegar
Place 1 cup sushi rice in a flat bottom pot. Add water to cover and swish with your hand. Using your hands, press down firmly on the rice for about 10 seconds, then drain water. Repeat several times. Place drained rice and water in a rice cooker or medium saucepan. Cook in a rice cooker according to manufacturer's directions, or simmer over low heat, covered, for 15 minutes if using a pan. Transfer cooked rice to a shallow glass baking dish to cool. While rice is cooking, dissolve sugar and salt in white vinegar. Drizzle slowly over rice, gently folding rice over to incorporate mixture (do not stir). Cover with plastic wrap until ready to use.

Makes 3 cups.
