Southwest Salsa Rice Bite Appetizer

Southwest Salsa Rice Bite Appetizer
Ingredients
3 cups brown or white rice cooked, cooled
2 cups pepper Jack cheese shredded
2 eggs beaten
2/3 cup medium (or hot) thick and chunky salsa
1/2 cup sour cream
1/2 tsp. salt
1/2 tsp. pepper
Nonstick cooking spray
3/4 cup corn or tortilla chips crushed
Additional salsa and sour cream for garnish (optional)
Directions

Prep: 10 minutes Cook: 15 to 20 minutes Makes: 48 appetizers

1. Preheat oven to 350°F. In a medium bowl, combine all ingredients, except chips and garnish.
2. Spray miniature muffin pans with cooking spray. Spoon approximately 1 tbsp. rice mixture into each cup, filling to just below the rim. Sprinkle crushed chips over filling, pressing slightly with back of spoon.
3. Bake for 15 to 20 minutes or until lightly browned. Serve warm with additional salsa and sour cream, if desired.
