Coconut Almond Bon Bons

Coconut Almond Bon Bons
Ingredients
2 cups Raley’s Sweetened Coconut Flakes
1/2 cup sweetened condensed milk
1/2 cup coconut milk
1/2 of a (7-oz.) tube almond paste
1-1/2 cups white chocolate chips
1 tsp. shortening
toasted coconut (optional)
Directions

Prep: 30 minutes  Cook: 2 minutes  Chill: several hours
Makes: 18 bon bons

1. Place Raley’s Sweetened Coconut Flakes, sweetened condensed milk and coconut milk in a medium saucepan. Bring to a boil; reduce heat and simmer, covered, for 10 minutes or until coconut is very soft.

2. Let cool, then crumble in almond paste. Mix well with your hands, then shape into 18 equal balls. Chill uncovered for several hours or overnight.

3. Melt white chocolate chips and shortening in a double boiler or in a bowl set over boiling water. Dip each bon bon in chocolate and remove with a fork, shaking off excess chocolate. Sprinkle with toasted coconut, if you like.
