Cheddar Eggs with Potato Chip Hash Browns

Cheddar Eggs with Potato Chip Hash Browns
Ingredients
2 tbsp. butter
3/4 cup chopped onion
1/2 of an 8 to 8.5 oz. bag Kettle chips (we like Jalapeño Jack or New York Cheddar)
2 tbsp. water
1/2 cup shredded sharp Cheddar cheese
4 eggs
1/2 tsp. garlic salt
Freshly ground pepper to taste
Snipped fresh chives or green onions (optional)
Directions

A fun crunchy take on hash browns, this will be a morning campfire favorite!

Prep:
15 minutes, Cook: 15 to 20 minutes, Serves: 4

Melt butter in a large skillet over medium heat. Add onion and cook for 10 minutes to soften.

2. Open chip bag and squeeze lightly to crush chips into about 1/2-inch pieces. Add to skillet and cook for a few minutes. Add enough water to moisten slightly, then stir in cheese. Cook until cheese is melted.

3. Push aside chips to make 4 “holes”; crack an egg into each. Season with garlic salt and pepper; cover and cook for 5 minutes or until eggs are cooked to your liking. Sprinkle with chives or green onions, if you like.
