Cross Rib Roast with Dijon and Cracked Pepper
Ingredients
1 large cross rib roast
1/4 cup Dijon mustard
2 tbsp. fresh herbs such as rosemary, thyme, marjoram and parsley chopped
1 tbsp. fresh garlic minced
2 tsp. cracked pepper
Directions
Preheat oven to 325ºF. Place roast fat side up in a
large,shallow roasting pan. Spread mustard on top
and sides of roast. Sprinkle with herbs, garlic and
pepper, pressing to coat roast. Insert a meat
thermometer, making sure it does not touch the bone.
Roast, uncovered, until meat reaches desired
doneness: 135ºF for medium rare or 150ºF for
medium. Let stand 30 minutes before carving.

Note: Allow approximately 18 to 20 minutes cooking
time per pound of meat for medium rare, 21 to 25
minutes for medium.

Allow 2 to 3 servings per pound of meat.
