Sweet Potato Latkes
Sweet Potato Latkes
1 lb. sweet potatoes
1/3 cup flour
2 Raley's Eggs
1 tsp. kosher salt
1/4 tsp. freshly ground pepper
1/8 tsp. cinnamon
2 tbsp. vegetable oil divided
chunky applesauce (optional)
light sour cream (optional)
Prep time: 15 minutes, Cook time: 12 to 16 minutes total

Peel and coarsely grate potatoesinto a bowl of ice water to keep potatoes from discoloring. Place flour, eggs, salt, pepper and cinnamon in a medium bowl; stir well. Drain potatoes and squeeze out moisture; stir into egg mixture. Heat 1 tbsp. oil in a large nonstick skillet over medium-high heat until very hot. For each latke, spoon about 1/4 cup of potato mixture into skillet and flatten with the back of a spatula. Cook for 3 to 4 minutes on each side or until golden brown and crisp on both sides. Drain on paper towels. Repeat with remaining oil and potatoes. Serve immediately with chunky applesauce and sour cream.

Makes 4 servings (about 8 latkes).
