Buttery Herbed Potatoes
2 Large Yukon Gold potatoes (about 8- oz. each)
2 tbsp. melted butter
1 tbsp. lemon juice
1 tsp. herbes de Provence
Salt and freshly ground pepper to taste
2 tbsp. Raley's Shredded Parmesan Cheese
Prep time: 10 minutes, Cook time: 45 minutes

Preheat oven to 400ºF. Cut a small slice off the
bottom of each potato so they sit flat on a cutting
board. With a very sharp knife, make cuts as close
together as possible, without cutting all the way
through, to make very thin slices. Place each
potato on a sheet of foil. Stir together butter,
lemon juice and herbes de Provence. Pour equal
amounts over each potato and season to taste with
salt and pepper. Bring up sides and ends of foil to
enclose. Place on a baking sheet and cook for 35
minutes. Carefully open packets and sprinkle
cheese over top; broil until lightly browned.

Makes 2 servings.
