Hearty Vegetable Chili with Fire Roasted Tomatoes
Ingredients
1 tbsp. olive oil
1 large onion, chopped
1 (28- oz.) can Muir Glen Organic Fire Roasted Diced Tomatoes
1 (16- oz.) jar Green Mountain Gringo Salsa (any variety)
1 (15- oz.) can pinto beans, rinsed and drained
1 (15- oz.) can black beans rinsed and drained
1 (12- oz.) package Light Life Smart Ground
1 (7- oz.) can diced green chiles
1 tbsp. chili powder
1 tsp. oregano leaves
1 tsp. ground cumin
1 cup chopped bell pepper (red, yellow or orange)
Salt and freshly ground pepper to taste
Directions

Prep: 15 minutes, Cook: 40 minutes, Serves: 8

1. Heat oil in a large pot. Add onion and sauté for 5 minutes.

2. Stir in all remaining ingredients except bell pepper, salt and pepper. Bring to a boil; cover and simmer for 30 minutes.

3. Add bell pepper and simmer for 5 minutes more. Season to taste with salt and pepper.
