Blackberry Cashew Yogurt Sandwiches

Blackberry Cashew Yogurt Sandwiches
Ingredients
3 cups vanilla ice cream or frozen yogurt
1/3 cup roasted, salted cashew halves
1/4 cup blackberry preserves

Cookies:
1 (17.5- oz.) pouch sugar cookie mix
1/3 cup blackberry preserves
Directions

Roll in additional cashews for extra nutty flavor!

Prep: 20 minutes, Cook: 12 minutes, Freeze: several hours, Serves: 12 

1. Layer spoonfuls of ice cream, nuts and preserves in a freezer-safe container. Cover and freeze until firm.

2. Prepare cookie mix according to package directions; lightly swirl in preserves. Drop 24 spoonfuls onto parchment-lined baking sheets and bake for 12 minutes or until firm to the touch. Let cool completely.

3. Spoon equal amounts of ice cream between cookies; freeze until firm.
