Black Cherry Amaretto Gelato with Almond Polenta Cookies

Black Cherry Amaretto Gelato with Almond Polenta Cookies
Ingredients
1/4 cup butter, softened
1/3 cup sugar
2 egg whites
1/2 tsp. vanilla extract
1 cup almond flour
1/4 cup Polenta Valsugana Quick Cooking Polenta
1/4 tsp. baking soda
1/8 tsp. salt
1/2 cup cherry preserves
2 cups Haagen-Dazs Black Cherry Amaretto Gelato, slightly softened
Directions

These delicious cookies are gluten free!

Prep: 20 minutes, Cook: 10 to 12 minutes
Freeze: at least 1 hour, Serves: 4 

1. Preheat oven to 350°F and line a baking sheet with parchment paper. Beat butter, sugar, egg whites and vanilla in a medium bowl until fluffy. Stir in almond flour, polenta, baking soda and salt.

2. Drop tablespoons of dough onto baking sheet. Bake for 10 to 12 minutes, cooking less for a softer cookie, more for a crunchier cookie. Let cool completely.

3. Spread preserves onto half the cookies. Spoon gelato onto remaining cookies; carefully sandwich together. Freeze until firm.
