Mango Berry Crêpes

Mango Berry Crêpes
2/3 cup Heart Smart Bisquick
2/3 cup skim milk
1/4 cup egg substitute
1 tbsp. sugar
1/4 tsp. cinnamon
3/4 cup lowfat ricotta cheese
3 tbsp. honey
1/4 tsp. cinnamon
1 cup diced mangoes
1 cup diced berries (any mixture)
Prep time: 10 minutes, Cook time: 15 minutes

Stir together all crêpe ingredients in a small bowl.
Spray a 7-inch nonstick skillet lightly with nonstick
cooking spray and place over medium heat. While
tipping skillet, add a generous 2 tbsp. of batter,
tilting skillet to cover the bottom. Cook for about 2
minutes or until lightly browned; turn and cook for
a minute more. Repeat with remaining batter.
Keep crêpes warm. Stir together ricotta, honey
and cinnamon in a medium bowl. Place about 1
1/2 tbsp. mixture in the center of each crepe. Top
each with 1/4 cup fruit; roll up and serve

Makes 4 servings.
