3 red bell peppers seeded and coarsely chopped
2 small yellow onions peeled and coarsely chopped
2 heads garlic peeled and minced
1 large tomato coarsely chopped
1/2 bunch cilantro (leaves only)
1/2 cup Raley's Spanish Olives
1/2 tsp. salt
1/2 tsp. oregano
1/2 tsp. pepper
1/2 tsp. turmeric
1 tbsp. Colavita Olive Oil
Leftover Sofrito can be used as a condiment
or as an ingredient in other Latin American

Prep time: 15 minutes, Chill time: at least 1 hour

Stir together all ingredients except seasonings and oil
in a large bowl. Blend in batches in a blender or food
processor until finely chopped. Stir in remaining
ingredients; cover and chill for at least 1 hour for
flavors to blend. (Note: May be made ahead and
stored in an airtight container in the refrigerator for 1

Makes about 6 cups.
