Arroz con Gandules (Rice with Green Peas)

Arroz con Gandules (Rice with Green Peas)
Ingredients
2 cups medium grain rice
2 cups water
3/4 cup diced ham
1/3 cup Raley's Tomato Sauce
1/4 cup canola oil
1/4 cup Sofrito (see separate recipe)
Salt to taste
2/3 cup frozen green peas thawed
Directions
Prep time: 15 minutes, Cook time: 40 minutes

Stir together all ingredients except peas in a heavy skillet (with a tightly fitting cover) and bring to a boil. Reduce heat and simmer for about 10 minutes or until most of liquid has evaporated. Stir, scraping any bits stuck to the bottom of the pan, and form into a mound in the center of the pan. Cover and cook for 20 minutes more. Stir and mound again; cover and cook for 10 minutes more. Season to taste with salt and stir in peas. (May be made 1 day in advance.)

Makes 8 servings.
