Creamy Artichoke and White Bean Dip
Creamy Artichoke and White Bean Dip
Ingredients
1 (15- oz.) can white beans rinsed and drained
1 (6.5- oz.) jar Cara Mia Marinated Artichoke Hearts liquid reserved
2 cloves garlic chopped
1/4 cup green onion tops sliced
2 tbsp. red bell pepper minced
1 tbsp. lemon juice
1 to 2 tsp. fresh rosemary snipped
Sea salt and freshly ground pepper to taste
Directions
Prep time: 10 minutes

Puree white beans, liquid from artichoke hearts and garlic
in a food processor until smooth. Add artichoke hearts and
green onions; pulse on and off until finely chopped. Stir in
bell pepper, lemon juice and rosemary. Cover and refrigerate
for several hours to allow flavors to blend, then season to
taste with salt and pepper. Garnish with sliced green onion
tops and serve with vegetables or breadsticks.

Makes about 2 cups.
