Irish Portabella Pizzas
Irish Portabella Pizzas
2 soft taco size flour tortillas
1 cup shredded Kerrygold Dubliner Cheese (in our Deli)
2 strips Raley's Bacon
8 baby bella mushrooms sliced
6 cloves Christopher Ranch Roasted Garlic chopped
1 leek (white part only) thinly sliced
fresh sage chopped

Prep: 15 minutes Cook: 30 to 35 minutes Makes: 12 small appetizers

1. Preheat oven to 425°F and line a baking sheet with parchment paper. Place tortillas on baking sheet and top with cheese. Cook bacon in a medium skillet until very crisp; remove and drain on paper towels.
2. Add mushrooms, garlic and leek to skillet; sauté for 10 minutes. Spoon evenly over tortillas and crumble bacon over top; bake for 15 minutes or until crispy. Sprinkle with sage and cut each tortilla into 6 wedges.
