Zatarain's Caribbean Skillet
3/4 lb. boneless, skinless chicken breast strips OR peeled and deveined shrimp
1 cup onion chopped
2 tbsp. butter
1 (8- oz.) box Zatarain's New Orleans Style
Caribbean Rice Mix
2 1/2 cups water
1/4 tsp. ground allspice
1 cup Raley's Fresh Produce Diced Bell Peppers (any color)
Sauté chicken OR shrimp with onion in butter for 10 minutes. Stir in Zatarain's, water and allspice. Bring to a boil; reduce heat and simmer, covered, for 25 minutes. Stir in bell peppers and let stand, covered, for 5 minutes. Makes 4 servings.
