Crispy Baked Chicken and Veggie Egg Rolls

Crispy Baked Chicken and Veggie Egg Rolls
2 cups Raley's Fresh Produce Vegetable Mix
1/2 cup onions chopped
1 tbsp. sesame oil
1 cup deli rotisserie chicken (or leftover turkey) chopped
2 tbsp. East-West Spicy Ginger Teriyaki Sauce
6 egg roll wrappers
1 tbsp. vegetable oil

Prep: 10 minutes, Cook: at least 20 minutes, Makes: 6

1. Preheat oven to 400°F. Sauté vegetable mix and onions in sesame oil for 5 minutes. Stir in chicken and teriyaki sauce.

2. Moisten edges of wrappers and place 1/3 cup mixture in the center of each. Fold in one corner, then sides and roll up.

3. Place seam side down on a baking sheet and brush with vegetable oil. Bake for 20 minutes or until golden brown.
