Curried Chicken Skewers
Curried Chicken Skewers
4 boneless, skinless chicken breasts, cut into thin 1-inch
Short bamboo skewers
3/4 cup Marie's Creamy Ranch Dressing
1/2 cup plain yogurt
2 tbsp. lime juice
1½ tsp. curry powder
1/2 tbsp. garlic minced
1/2 tsp. ground cumin
1/2 tsp. cayenne pepper
1/4 tsp. pepper
Prep: 10 minutes Cook: 3 to 5 minutes Makes: 8 appetizers
Chill: overnight
1. Thread chicken strips onto short bamboo skewers; place in a shallow container.
2. Stir together remaining ingredients in a medium bowl. Pour over chicken; cover and refrigerate overnight.
3. Grill or broil for 3 to 5 minutes on each side or until cooked through. Sprinkle with snipped chives.
