Chili and Spice Rubbed Chicken
Ingredients
4 boneless, skinless chicken breasts
2 tsp. chili powder
1 tsp. garlic powder
1/2 tsp. each: oregano, ground cumin and salt
and salt
1/4 tsp. pepper
1/2 cup prepared salsa
Directions
Prep time: 10 minutes
Cook time: 25 to 30 minutes

Preheat oven to 350°F. Rinse chicken breasts and
place in a shallow baking pan. Stir together all dry
spices in a small bowl and sprinkle over both sides of
chicken. Bake for 20 to 25 minutes or until cooked
through to an internal temperature of 165°F. Spoon
salsa over chicken and return to oven for 3 to 5
minutes more to heat. Serve over Spanish rice.

Makes 4 servings.
