Homemade Tortillas
Homemade Tortillas
3 cups flour
3 tbsp. shortening
3/4 tsp. salt
1/2 tsp. baking powder
3/4 cup water

Prep: 25 minutes Cook: 30 minutes

1. Mix together flour, shortening, salt and baking powder in a medium bowl with a fork until mixture resembles coarse crumbs; stir in water. Place on a lightly floured board and knead several times to form a smooth dough.
2. Cover with a cloth and let stand for 30 minutes. Divide dough into 12 equal portions. Roll each into a 6- to 7-inch circle.
3. Cook each tortilla in a skillet over medium-high heat for about 2 minutes on each side or until lightly browned and puffed.

Makes: 12 tortillas 

Tip: In addition to soft tacos and quesadillas, these tortillas are great warm with a little butter, or cut into triangles, deep fried and tossed in cinnamon sugar.
